Last June we reported that Tristan Simon had sold his stake in Consilient Restaurant Management to Tim Headington of Headington Companies. Yesterday, Eats Blog announced that Consilient has changed its name to Raised Palate Restaurants. According to a press release:

The name Raised Palate Restaurants reflects the company’s core values of honing and perfecting ingredients, service and presentation in its seven restaurants, including the most recent opening of Thirteen Pies in Atlanta, Georgia. Additional expansion restaurants are on the horizon in Dallas, Houston and Atlanta.

“It’s a new day for us and the team felt strongly about wanting to raise every bar even higher,” says Christine Magrann, Executive Officer of Talent and Operations. “We feel Raised Palate perfectly captures our focus on delivering high-quality everything.”

Raised Palate Restaurants currently manages and operates Hibiscus, The Porch, Victor Tangos, Thirteen Pies (Fort Worth and Atlanta), American Food and Beverage (Fort Worth, Atlanta, and coming fall 2015 to Houston).
